A true Belgian style Wit beer with a light, tart, and slightly acidic flavor, finishing with a complex citrus blend. Our Wit yeast does the heavy lifting on this beer producing complex Belgian flavors resulting in a simple yet refined taste. This is a great beer for a hot summer day or paired with a spicy dish.

Block IPA
Style: India Pale Ale 'IPA'     A.B.V. 7.2%     I.B.U. 80
The Block IPA is a true Hop Monster with 6 different hop varieties slammed in every inch of this beer. The malt bill is simple and straight forward so not to get in the way of the true hop flavor. The initial aroma is citrus and passion fruit followed by a burst of green hop and pine flavors.. The bitterness comes through in the middle allowing for a pure hop goodness in the finish.

We’re devoted to creating a confluence of great beer, good friends and wonderful times — and look forward to bringing you together with a pint very soon.
Beers:

Farmer John's, Multi-Grain Ale
Style: American Ale     A.B.V. 5.7%     I.B.U. 21
Lightly hopped with English East Kent Goldings hops chosen for their subtle, earthy qualities and finished with Czech Saaz hops for their sweet, floral essence to create a beer that’s light in body and color, with a velvety texture and an aroma as sweet as a freshly cut field of hay. Farmer John’s captures the endless bounty of Iowa in an easy-drinking, blonde ale.

Des Moines IPA, India Pale Ale
Style: American India Pale Ale     A.B.V. 6.9%     I.B.U. 75
Iowa’s steady, well balanced nature is reflected in this IPA with its mix of medium body, lighter color and plenty of malt flavor to balance the massive hop impact. Citrusy and piney hops from the Pacific Northwest offset the robust malt flavor of the two-row barley and medium crystal malts. Des Moines IPA proudly represents the Hawkeye State in the category of American IPA, a favorite of beer connoisseurs all across the country.

Thomas Beck Black IPA
Style: American India Pale Ale     A.B.V. 6.4%     I.B.U. 58
This dark beer pays homage to Des Moines’ history as a late 19th century coal town. Confluence Brewery is located on Thomas Beck Road, which is named after an English immigrant who developed extensive (but now long abandoned) coal mine holdings in Des Moines, including some near our brewery. The dark color comes from black wheat, which is combined with two-row base malt and a good portion of caramel malt and some flaked rye to add a subtle dry, spiciness. Don’t let the color fool you, this dark beer is not roasty or stout-like. We used a special blend of hops, including Nelson Sauvin from New Zealand, to give it a unique flavor and aroma profile completely distinct from its India Pale Ale cousin, Des Moines IPA.

Capital Gold, Golden Lager
Style: Light Lager     A.B.V. 5.1%     I.B.U. 22
Glowing like the Iowa Capitol dome in Iowa’s capital city, Des Moines, this golden lager is brewed with time-honored German brewing methods. Its slightly sweet, bready, malty flavor is balanced perfectly by traditional German noble hops with medium-low hop bitterness. Like building the magnificent 23-karat gold leaf Iowa Capitol dome itself, this beer can’t be rushed. We create it with the finest domestic and imported German two-row barley malt and noble German hops as well as traditional lager yeast. This delicate beauty undergoes a lagering period of three to four weeks after initial fermentation to bring out the best this beer has to offer. The result is a beer which, much like Iowa, has something for everyone — satisfying to the experienced craft beer drinker, yet welcoming to those new to the world of craft beer.

Royal Roots, English-Style Porter
Style: Porter     A.B.V. 5.7%     I.B.U. 27
Iowa has scores of people of English descent and a long history of railroad and riverboat travel, so it’s a perfect place for a porter beer. Long before airline check-in counters, the men who carried traveler’s bags to and from trains and boats were called “porters.” These men supposedly favored this kind of dark ale so much that the style of beer became known as “porter.”

Blue Corn Lager, with Peppers
Style: Light Lager     A.B.V. 5.8%     I.B.U. 21
It seems natural for Iowa-based Confluence to offer a corn-based brew. But while Iowa corn makes great bourbon, it’s not so good for beer. So we use open-pollinated, heritage organic blue corn grown in New Mexico. First we perform a cereal mash by boiling the milled blue corn to expose the starches. The resulting purple porridge is then mashed conventionally with barley malt causing the color to magically disappear and creating a super sweet, almost clear wort. The entire wort is boiled and we add enough Saaz hops for bittering without overwhelming the blue corn flavor. It’s then fermented with German lager yeast and lagered as normal. The resulting beer is big for its style and refreshing on warm days with higher alcohol content than the classic American pilsner.

Rock Dodger, Double IPA
Style: American India Pale Ale     A.B.V. 8.7%     I.B.U. 88
Rock Dodger is our salute to the many beer-loving bicyclists across Iowa, especially those who regularly traverse the 75-yard gravel path from Gray’s Lake bike trail to Confluence Brewery for a pint. We started with American two-row barley malt, Belgian pilsner malt and just a touch of specialty caramel malt. Then we added a blend of hops — including Citra (the star of our popular South Side Citra Ale), Crystal and Simcoe. The result is a beer in which the sweet malt is balanced by moderate bitterness and infused with tropical and citrus fruit flavor and aroma. For a big ABV double IPA that’s as smooth as a freshly paved bike path, try Rock Dodger.

Pivo Pils
Style: Pilsner     A.B.V. 5.3%     I.B.U. 40
Pivo Hoppy Pils is a classically rendered pilsner with a West Coast dry-hopping twist, showcasing stylistic influences from Germany, Italy and the Czech Republic. Lighter beer styles like pilsner have been hijacked by industrial lager beer in the United States, and it’s time for craft brewers to take it back. Pivo Hoppy Pils offers impeccable balance with floral aromatics, spicy herbal nuances, and bergamot zest and lemongrass notes from dry hopping with German Saphir hops.

Union Jack IPA
Style: India Pale Ale 'IPA'     A.B.V. 7.5%     I.B.U. 70
Union Jack rings all of the bells of an aggressively hopped West Coast IPA, but with an astonishing balance that stands out from the crowd.  The name Union Jack is a nod to the colonial origins of the IPA style, and to the British expatriate who co‐founded our brewery. This originator of our “Jack” IPA family is double dry‐hopped to create bold grapefruit, tangerine and citrus flavors, all contrasted by pale malt sweetness to rein in the intensity. The result is a tribute to—and a twist on—the IPA style that put the West Coast on the craft beer map.

Wookey Jack Black Rye IPA
Style: India Pale Ale 'IPA'     A.B.V. 8.3%     I.B.U. 80
A riff on the familiar Black IPA style, Wookey Jack is gnarly on the outside yet refined on the inside. Malted Rye and a dash of Cara Rye impart a spicy grain quality to the palate, while double dry-‐hopping with Citra and Amarillo hops brings a citrusy dimension to the aroma profile. The brewing team also claims to have incorporated a bit of "Wookey Dust" into the recipe. The beer is black in color, but if you close your eyes and taste it, you’ll say it’s a true IPA. Wookey Jack is unfined and unfiltered to retain its woolly natural texture and character.

Small Town Brewery - Wauconda IL

Table: 87
Website: http://smalltownbrewery.com/
My great-great-grandfather from the 1600s was the captain of a ship in England. He was also a bit of a gambler. As legend has it, he won a brewery during a high-stakes card game, which led him to start crafting his own beers. He began brewing beer on the ships he sailed. This allowed him to travel further than other vessels because beer stayed fresh during long journeys. The story goes that his beer was even consumed on a fleet of ships he commanded that transported some of the earliest settlers to America. Growing up, I had never heard the complete story about my great-great-grandfather until I expressed an interest in making my own beer. When I told my mom that I planned to open a brewery, she finally revealed my family’s beer making history and why brewing was “in my blood.” Using some of my great-great-grandfather’s recipes as inspiration, I founded Small Town Brewery. At Small Town, our goal is to honor my family’s beer making tradition by creating specialty beers with unique and flavorful ingredients

Beers:

CocO Chocolate Stout
Style: Sweet Stout     A.B.V. 6.0%     I.B.U. 24
Cream stout with lactose sugar…”thats why it’s a cream stout.” Cocoa nibs and bourbon vanilla beans make this beer creamy and chocolaty. Hints of coffee from 2 types of roasted malts. Candi sugar for a bit of marshmallow. We wanted a stout, so why not a cream stout? Because we can, and we did.

6 Foot 6 India Pale Ale
Style: India Pale Ale 'IPA'     A.B.V. 6.6%     I.B.U. 65
Glacier hops, with some Horizon thrown in for a bit of bitterness, 2-Row and Caramel 80L malt, a golden color and white head. Smells of melon and candied fruit, tastes of pineapple and melon

Smoked Red Ale
Style: American Amber / Red Ale     A.B.V. 6.5%     I.B.U. 20
Roasted malts yield nutty flavors mixed with dark fruit from dark caramel malts. A responsible amount of cherry wood smoked malt lends hints of forest and campfire that blend well with the subtle spice of Perle hops. Not being fans of extremely smoked beers, we wanted to bring some balance to the style

West OFest
Style: Light Lager     A.B.V. 5%     I.B.U. 25
Copper color, creamy white head. Biscuit aromas from kilned malts and a hint of caramel. Slight hop aroma from a late kettle addition of Mt Hood hops.. A balanced drinkable Marzen style lager.
